Ingredients for 15 Puffs

  • 80g white flour (1/2 bowl)
  • 2pinches of white sea salt
  • 50g corn oil (5 Tbsp.)
  • 3eggs
  • 150ml water

 

 
Basic recipe for Cream Puffs


     Method:

  1. Sift flour and salt
  2. Bring water and oil together to boil and add the flour at once while stirring firmly
  3. Keep on stirring until the batter becomes a ball which does not stick to the pan anymore (this takes a minute)
  4. Turn off the flame and mix the eggs one by one into the batter
  5. Oil a baking tray. Use 2 wet tablespoons to shape puffs and leave enough space for each of them
  6. Baking:
    Put the tray at the bottom of the oven on 180 °C for 20 minutes (position 5) so that the puffs can rise
    Change the tray to the centre of the oven and bake 20 minutes on 200 °C (position 6)
    Go back to 180 °C (postion 5) and bake another 10 to 20 minutes to get them well done inside
    Cover after 30 minutes with tin foil if necessary
  • You can also buy empty puffs at a bakery
