Ingredients for 8 muffins

  • 150g white flour (2 bowls)
  • 40g ground almondpowder (1 cup)
  • 9g baking powder or tartaric acid (4 tsp.)
  • 1/8tsp. of white sea salt
  • 35g sunflower oil (3 1/2 Tbsp.)
  • 60g rice syrup (5 Tbsp.)
  • 325g rice- or millet amazake (nearly 1 jar)
  • 250g washed strawberries
  • 200g cherries without the pits

 

 
Strawberry Muffins


    Method:

  1. In a bowl mix the flour, ground almonds, tartaric acid, salt and oil
  2. Add rice syrup and amazake until you get a thick pourable batter (adding water if necessary)
  3. Add the strawberries and cherries
  4. Oil 15 muffin tins and each one with muffin batter
  • Cook the muffins in the middle of the oven and cover, if needed, after 30 minutes with baking foil to retain moisture
