Ingredients for 16 muffins

  • 300g white flour (2 bowls)
  • 80g ground almondpowder (1 cup)
  • 18g baking powder or tartaric acid (4 tsp.)
  • 1/4tsp. of white sea salt
  • 70g sunflower oil (7 Tbsp.)
  • 125g rice syrup (5 Tbsp.)
  • 650g rice- or millet amazake (nearly 1 ¾ jars)
  • 250g washed strawberries
  • 200g cherries without the pits

 

 
Strawberry Muffins


    Method:

  1. In a bowl mix the flour, ground almonds, tartaric acid, salt and oil
  2. Add rice syrup and amazake until you get a thick pourable batter (adding water if necessary)
  3. Add the strawberries and cherries
  4. Oil 15 muffin tins and each one with muffin batter
  • Cook the muffins in the middle of the oven and cover, if needed, after 30 minutes with baking foil to retain moisture
