Ingredients for 6 slices

  • 200g white flower (1 1/2 bowl)
  • 9g baking powder or tartaric acid (2 tsp.)
  • 1/8tsp. white sea salt
  • 40g sunflower oil (4 Tbsp.)
  • 50g rice syrup (2 Tbsp.)
  • 325g rice- or millet amazake (almost 1 jar)
  • 60g roasted hazelnuts
  • some water if needed

 

 
Hazelnut Cake

    Method:

  1. Mix flour, baking powder and salt
  2. Add the oil, amazake, hazelnuts, raisins and grated orange rind until you get a thick pourable batter (adding water if necessary)
  3. Oil a cake tin and pour in the batter until 75% full
  • Bake the cake in the middle of the oven and cover after 45 minutes, if necessary, with baking foil to prevent it drying out
