Ingredients for 12 slices

  • 400g white flower (3 bowls)
  • 18g baking powder or tartaric acid (4 tsp.)
  • 1/4tsp. white sea salt
  • 80g sunflower oil (8 Tbsp.)
  • 100g rice syrup (4 Tbsp.)
  • 650g rice- or millet amazake (almost 1 big jar)
  • 125g roasted hazelnuts
  • some water if needed

    Method:

  1. Mix flour, baking powder, salt
  2. Add the oil, amazake, hazelnuts, raisins and grated orange rind until you get a thick pourable batter (adding water if necessary)
  3. Oil a cake tin and pour in the batter until 75% full
  • Bake the cake in the middle of the oven and cover after 45 minutes, if necessary, with baking foil to prevent it drying out
