Ingredients for 12 cookies

  • 60g corn or sunflower oil ( 6 Tbsp.)
  • 75g rice-, millet or oat amazake (4 Tbsp.)
  • 60g rice syrup (2 Tbsp.)
  • 1/4 tsp.white sea salt
  • 50g white flour (1/2 bowl)
  • 50g almond flour or ground almonds(1/2 bowl)
  • 50g coconut flour (1/2 bowl)
  • some grated rind of tangerin
  • fruit spread optional

    Method:

  1. In a bowl mix all dry ingredients together with the oil
  2. Add the amazake, rice syrup and egg to this mixture and leave to rest for half an hour
  3. Cover a baking tray with oil and shape biscuits with a wet spoon and fork
  4. Oil a baking tray and shape each biscuit on the tray using a wet spoon and fork
  5. Make a little hole in the middle and fill with fruit spread
  6. Bake in the oven for about 25-30 minutes on 180°C (gas mark 5)
