Ingredients for 12 cookies

  • 25g corn oil ( 3 Tbsp.)
  • 260g rice-, millet or oat amazake (2/3 jar)
  • A few drops of vanilla extract or 1/4 tsp. vanilla powder
  • 60g rice syrup (2 Tbsp.)
  • 1 egg (optional)
  • 1/4 tsp.white sea salt
  • 1/2 tsp. baking powder
  • 170g white flour (1 bowl)
  • 24g cocoa or carob powder(3 Tbsp.)
  • 60g finely chopped walnuts (2/3 bowl)

 

 
Chocolate Cookies


    Method:

  1. In a bowl mix the oil, amazake, vanilla and egg
  2. In another bowl mix the salt, tartaric acid, cocoa powder, flour and walnuts
  3. Mix the contents of both bowls together and leave to rest for half an hour
  4. Oil a baking tray and shape each biscuit on the tray using a wet spoon and fork
  5. Bake in the oven for about 40- 45 minutes at 180ºC (gas mark 5)
