Ingredients for Filling:

185g amazake (1/2 jar)

185ml water (1/2 jar)

a pinch of white seasalt

4g agar-agar flakes (1 Tbsp.)

6g corn flour or kuzu (1 tsp.)
Method for Filling:

Bring amazake, water, salt and agar-agar to boil while stirring

Put the flame low until agar-agar has dissolved (about 5 minutes)

Dissolve corn flour or kuzu in a little cold water then add to the mix and stir to thicken

Spread the filling on the pie crust
Ingredients for Fruit Topping:
-
500g apples
-
50ml concentrated apple juice
-
150ml water
-
a pince of white seasalt
-
a small hand of currants (optional)
Method for Fruit Topping:

Cut the apples into slices
-
Bring water, concentrated apple juice and salt to the boil
-
Blanche the of apple slices for 1 or 2 minutes
-
Arrange the apples on the pie filling
-
Sprinkle washed and soaked currants or raisins over the pie
Ingredients for Glaze:
-
150ml water (1 small bowl)
-
30g rice syrup (1 Tbsp.)
-
a pinch of white seasalt
-
4g agar-agar flakes (1 Tbsp.)
-
6g corn flour or kuzu (1 tsp.)
Method for Glaze:

Bring rice syrup, water, salt and agar-agar to boil while stirring
-
Put on a low flame until the agar-agar has dissolved (about 5 minutes)

Dissolve corn flour or kuzu in little cold water, add to the mix and stir until thick
-
Pour this glaze over the pie to cover all the fruit
